Protein Pancakes with Cherry Topping

Ingredients
- 1 cup quick oats
- 1 teaspoon baking powder
- 1 tablespoon brown sugar
- 2 eggs
- 1/2 cup whole milk Greek yogurt
- 1 teaspoon vanilla
- 2 tablespoons whole milk
- Chukar® Sour Cherry Sauce
Directions
- Oil and preheat pancake griddle.
- Place oats in a blender or food processor and pulse until the oats are just slightly coarser than flour. Add the baking powder and brown sugar. Combine well.
- In a small bowl beat together the eggs, yogurt, vanilla, and whole milk. Combine with dry ingredients until just evenly moistened. Batter may be lumpy.
- Test griddle heat by flicking a few drops of water on the hot surface. If it sizzles, the pan is ready. Pour ¼ cup of the pancake batter onto the griddle. Cook until small bubbles form across surface of pancake, then flip finish cooking.
- Top pancakes with a dollop of Chukar® Sour Cherry Sauce.
