Pacific Salmon with Peach Cherry Salsa

Serves 4

Ingredients

  • 1 untreated cedar or alder plank
  • 1 1/2 pound wild salmon filet
  • salt and pepper, to taste
  • 1 lemon, thinly sliced
  • 1 jar Chukar® Peach Cherry Salsa
  • 1 bunch of scallions, chopped

Directions

  1. Soak plank in water for at least 30 minutes.
  2. Sprinkle salmon evenly with salt and pepper.
  3. Drain plank and place on grill over medium-high heat (350°-400°F) for 3 minutes or until grill marks appear. Remove plank from grill.
  4. Place salmon, skin side down, on heated side of plank. Top with lemon slices.
  5. Place planked salmon on grill, cover, and grill 20 minutes or until heated to an internal temperature of 145°F.
  6. Check occasionally to ensure edges of plank don't ignite.
  7. Top with Chukar® Peach Cherry Salsa and scallions. Serve immediately.
